Enjoy this week's classic IBS recipe!

Sunshine Bread

This recipe makes two big beautiful loaves that are a brilliant orange, and guaranteed to make any morning a little sunnier. The extra loaf is perfect for freezing so you can pull out slices as needed for breakfasts, snacks or dessert. If you want just one loaf halve the recipe and it will still come out perfectly.

The bread is lusciously moist, heady with spices, and delicious. It is also a terrific way to safely add small amounts of heart healthy fats using a high soluble fiber foundation to keep your gut calm. The soluble fiber is coming from the sweet potatoes and the flour, as well as the added Tummy Fiber.

Makes Two 9 x 5" loaves, 16 slices per loaf

Preheat oven to 350F.

In a large bowl sift:
3 1/2 cups all-purpose unbleached white flour
3 tablespoons Tummy Fiber Acacia
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves

Whisk dry ingredients with a metal whisk until thoroughly blended.

In a small bowl stir together and set aside:
2/3 cup unsweetened soy/oat/rice milk
2 teaspoons apple cider vinegar

In a large bowl beat well with an electric mixer:
2 2/3 cups dark brown sugar
2/3 cup canola/safflower/sunflower oil
8 organic egg whites
4 cups finely diced peeled sweet potatoes, steamed until very soft, then pureed until smooth
2 tablespoons vanilla extract

Beat in the soured soy milk into the sweet potato mix. With a wooden spoon, add the dry ingredients to the wet, stirring the batter by hand just until well blended. Fold in by hand:

1/2 cup finely chopped dates

Pour batter into two non-stick loaf pans sprayed with cooking oil. Bake for about 1 hour or until a toothpick or cake tester inserted into the center of the loaf comes out clean. Cool on racks.

Gone gluten free? Substitute an all purpose gluten free baking flour for the all purpose white flour.
