Asian Sweet Pickled Cucumbers
These cucumbers make a crunchy, sweet-and-sour side dish that is fabulous with any Asian meal, particulary grilled seafood or chicken. Although the dressing can be made well in advance, don't add the cucumber itself until just before serving or it will lose its snap.
This is a side dish, with insoluble fiber that needs a main dish to provide a safe soluble fiber foundation, so serve this with white rice or rice noodles. You'll also have plenty of leftover dressing, which you can reuse with a fresh cucumber the next day.
Makes 3-4 Servings
1 cup white or rice vinegar
1 cup granulated sugar
1 teaspoon salt
1 large cucumber (about 1 lb.)
cooked jasmine rice, sushi rice, or rice noodles for serving
Combine vinegar, sugar, and salt in small saucepan over high heat. Bring to a boil, and cook for 1-2 minutes until slightly reduced and thickened. Chill. Peel cucumber and slice in half lengthwise, scraping out any seeds. Cut halved cucumber crosswise into thin slices, and add to chilled vinegar dressing. Serve immediately with jasmine rice or rice noodles.
