Delish!!!!! I made Rachael Ray's, Potato, Spinach, and Tomato Soup. I substituted veggie broth (of course) for the chicken broth, and if you decide to try it, I would lessen whatever tomato product you decide to use. Of course, if you can't handle tomato products ( I love that I can),you could always omit. I confess, I did top with a little bit of Parmegiano/Reggiano cheese. I could't resist. If you want the recipe go to Food Network, under Rachael Ray, and then soups. Eat with a slice of French bread. Umm Umm good!
