I just invented this recipe today. I ate it and feel pretty good. We all know that Pasta is huge for soluble fiber so I can't imagine we're running short of variations on pasta.
Here we go:
3 Cups of Pasta (you'll have left overs) 1/4 Cup Brocolli (actually just under, keep it to a minimum)
Dressing: 3 Tbsp. Virgin Cold Pressed Olive Oil 1 Tbsp. White Vinegar 1 Tsp. Thyme 1 Tsp. Rosemary
Boil the pasta and then run it under cold water. Boil the brocolli (I was hesitant to name Brocolli, but it's such a small amount that it shouldn't be too bad, if you're unsure pic a different veggie that's low in insolubles). Toss the pasta and brocolli together in a bowl. Chill for 15 mins. in the freezer in a metal mixing dish. Once it's partially chilled combine all the ingredients for the dressing. Drizzle it lightly over the Pasta. Use sparingly to keep fat content down. Place in fridge for 1 hour, or freezer for another 15-20 mins. depending on how much of a hurry you are to eat in.
Eat and enjoy. I personally think that a baked sweet potatoe goes nicely with this dish. Eat it first (not the skin) and you'll have some soluble fiber on your stomach. Then you should be fine because the ratio of this recipe is very high in soluble fiber. The only two things to remember to use sparingly are the olive oil, which is full of fat, and the brocolli, which may or may not be a problem for you.
Enjoy!
