If you make it, don't forget the PIQUANT SAUCE: Combine 6 tablespoons brown sugar, 1/2 cup catsup, 1/2 teaspoon nutmeg, and 2 teaspoons dry mustard. Spoon it over top, and bake another 15 minutes. It really makes it!
And in case anyone's wondered about substituting vegetables and things like that... I can't eat peppers, and I've been having an "off" week, so I was kind of afraid to eat tomatoes, so I omitted both and added about a cup of finely chopped mushrooms instead. Mind you, this DOES alter the flavor significantly, but it was still REALLY tasty. Don't be afraid to experiment, but if you try a veggie with a high water content, you might want to saute it a little first or keep the quantity low, so you don't end up with meatloaf soup!
