Spaghetti with Clam Sauce a la Andy

Here's Andy's spaghetti clam sauce recipe. He doesn't measure things anymore so I can't tell you exactly how much parsley or basil. He uses fresh when we haven't and dried when we don't. This is the recipe that won my heart. Andy made it for me on our FIRST DATE!!!

Start pasta (we like spaghetti but fettucine is more traditional)

Heat approx 3 TBL Olive Oil (or a mix of olive and canola)
add 3 cloves garlic put through a garlic press
do not brown garlic just cook for a minute or two
add liquid from small can of minced clams
add parsley, basil, salt, pepper, then bring back almost to boiling
add clams...warm...do NOT cook the clams (or they'll get rubbery)

Drain pasta and divide between plates or pasta bowls.
Spoon clam sauce over pasta....top with grated soy cheese

Serve with French or Italian bread and the green vegetable of your choice.

Makes 1 Andy-size serving and 1 LauraSue-size serving or 4 normal servings!!
