You could just omit the pecan layer. You can also just take the recipe on the back of a can of pumpkin, substitute sweet potato puree, use soy milk for dairy, and egg whites for whole eggs. That works beautifully. Actually, making those adjustments to just about any basic sweet potato pie recipe should take care of any problems. If the recipe calls for any butter, just substitute canola oil and make sure the quantity is no more than 3-4 T for the whole recipe.
Watch out for the crust - either use graham cracker or don't eat the regular pastry crust. They're may be some pastry crust recipes on the boards, but it's so hard to get the fat quantity down to safe levels and keep a flaky, tender result. So watch the fat content no matter what.
