Sek - first of all, don't use plain water. Use fat free chicken, beef or vegetable broth instead. It gives it a good flavor. I cook my rice with broth most of the time. It also gives the food it's served with good flavor.
Why not use Rice-A-Roni too. Make both and mix them together for a different rice dish. I always have a container of cooked rice in the fridge in case I need it, if you know what I mean! I like to snack on it too. One half cup is only 2 points for Wt Watchers.
Also, brown rice is good and nutty flavored. It takes a bit longer to cook, but it's worth it. I make all my rice in the microwave. It saves a pot, but you have to be careful not to cover it all the way because it'll boil over. I always put a paper towel under the dish and leave the lid ajar or the plastic wrap open on one end.
Try butter buds or spray butter on it with a little s&p, or maybe garlic or onion powder, or fresh chives. Or maybe saute some onions until they're soft (if you can tolerate them) and mix them in.
What about rice desserts with soy, rice or almond vanilla milks? I haven't tried any yet, but I'm giving myself some good ideas!!!
