I had a list of 50 suggestions sitting in a recipe file. I haven't tried any of them, and about half were hardly suitable for anyone with IBS. Here's a modified list:
To hot cooked rice, add: 1. lime juice and chopped cilantro 2. sauteed wild mushrooms, thawed frozen petite peas (canned might be softer), and soy Parmesan cheese 3. diced tomatoes and basil pesto 4. red beans, low-fat coconut milk, and chopped cilantro 5. grilled chicken strips cut into bite-size pieces, chopped sun-dried tomatoes, basil pesto, and balsamic vinaigrette 6. chopped roasted chicken, sliced green onions, and orange marmalade 7. black beans, salsa, soy sour cream, and chopped cilantro 8. kidney beans, caramelized onions, and soy sour cream 9. sauteed mushrooms and chopped, steamed asparagus 10. chopped roasted chicken and chopped chives 11. thawed frozen peas (canned might be softer) and finely chopped fresh mint 12. lemon zest and fresh lemon juice 13. sauteed minced garlic and mushrooms 14. navel orange slices, chopped red onions or chives, and vinaigrette dressing 15. vanilla soy ice cream and a dash of cinnamon 16. scrambled egg whites, crumbled vegetarian sausage, soy cream cheese cubes, and sliced green onions 17. soy yogurt and finely chopped fresh fruit 18. sauteed zucchini and carrot "matchsticks" and soy Parmesan cheese 19. soy milk, sugar, and vanilla 20. black beans, minced red onion, chopped cilantro, and vinaigrette 21. finely diced carrots, thawed frozen peas (canned might be softer), scrambled egg whites, grated ginger root, and soy sauce 22. chopped rotisserie chicken and sun-dried tomato pesto 23. grilled shrimp, lime juice, and fresh pico de gallo -–adapted from http://www.ricecafe.com/
