Sweet Potato, Carrot, and Ginger Soup
Cook 1 large chopped onion in 1 Tbs. oil in pot over medium-high heat, 5 minutes. Stir in 3 peeled and cubed sweet potatoes; 1 lb peeled and sliced carrots; 3 pressed garlic cloves; 1/2 cup chopped ginger; 4 15-oz cans fat free chicken broth. Cover, boil, and cook, 10 minutes. Transfer to food processor; puree until smooth. Stir in 3 Tbs. lime juice and 1/2 tsp. salt.
Makes 10 cups.
