I remember eating Cheeseburger Helper all the time as a young kid. But without being able to eat red meat, butter, or cheese, I haven't had it in years. Tonight my husband and I decided to make it and it was delicious! Here's my recipe:
2 tablespoons smart balance light 2 tablespoons flour 1.5 cups rice milk 1 cup Daiya Chedder Cheese (the BEST non-dairy, non-soy cheese I have ever had!) 1/4 pound uncooked macaroni
Melt smart balance light on medium heat, add in flour. Stir for a few minutes to allow the flour to cook. This will take the startchy taste away. Add cold milk to the mixture and stir as it thickens. When it gets pretty thick, add in cheese in gradually, stirring consistantly. Cook until all ingredients are combined and the mixture resembles a thick cheese sauce. Cook ground white meat turkey. Cook macaroni until al dente. Combine all ingredients and ENJOY! Also can be put into a dish, sprinkled with breadcrumbs, and cooked until golden brown. DELICIOUS!
