I simply MUST share this fabulous recipe that I found. IT is so simple, just throw it in the crock-pot on low for 6-8 hours. You can use yam or sweet potato (1 Large yam would do, or 2-3 smaller sweet potatoes). I like to mix it with some small pasta for a complete IBS-safe meal.
- 2 medium sweet potatoes, peeled and diced (I used 1 large yam b/c they were cheaper than sweet potatoes)
- 1 small onion, diced (red onion)
- 1 red pepper, diced
- 1 can black beans, drained and rinsed
- 1 14 oz. can fire roasted tomatoes (if you can't find fire roasted, no biggie, just use regular diced tomatoes)
- 1.5 cup veggie broth (or chicken broth, or water, whatever you have on hand)
- 3 garlic cloves, minced
- 1 Tablespoon chili powder
- 1 tsp. paprika
- 1 tsp. cumin
- pinch cayenne
- 1/2 tsp. salt
Spray slow-cooker with non-stick spray. Cook on low for 8 hours. Enjoy on its own or with a big chunk of fresh bread or some boiled pasta for a complete "pasta" meal.
