One easy tofu sandwich is to freeze a block of firm tofu until it is solid, thaw it, press it between two plates with a weight on top like a heavy book, then slice it and marinate it in barbecue sauce. Once it has marinated for awhile, bake it right in the sauce until it is heated through and serve it on sandwich buns with pickles, just like "real" barbecue.
Another good one is eggless egg salad, made with crumbled firm tofu, low-fat mayonnaise, your favorite mustard, finely chopped celery and parsley, grated carrot, pickle relish if you like it, and some turmeric for color. Eat it on safe white sandwich bread (Rudi's Organic Bakery is good), with lettuce if you can tolerate it.
Tofu that is sold already marinated and baked is good sliced thinly like cheese and layered in a sandwich with your favorite safe condiments and vegies, such as low-fat mayo, your favorite mustard, pickle slices, etc.
Two good tofu cookbooks are the revised edition of _Tofu Cookery_ by Louise Hagler and _The Giant Book of Tofu Cooking_ by K. Lee Evans and Chris Rankin.
