Maple Sweet Potatoes

This was inspired by the "20 min Maple Chicken", posted by littlelani, found in the Recipe Exchange Index. The sauce is nearly the same, just smaller amounts and used differently. Hope you like it!
Maple Sweet Potatoes
2 sweet potatoes (medium to large) 1/4 cup maple syrup 1 Tbsp apple cider vinegar 1 Tbsp sherry 1 Tbsp soy sauce, preferably a reduced sodium version 1 tsp ground ginger 1 tsp garlic powder 1/4 tsp pepper dash paprika
Scrub potatoes and slice into 1 inch pieces. Boil potatoes over medium-high heat for 15-20 minutes or until tender.
While potatoes are cooking, combine all other ingredients in small bowl and mix well.
Drain potatoes and remove skins (use gloves, potatoes will be hot). Mash potatoes to desired consistency. Add 2-4 tablespoons of sauce (depending upon your own tastes) to the mashed potatoes and mix well. Serve immediately.
Yields 2-3 servings
We served this with Grilled Chicken Breasts (boneless, skinless), seasoned with garlic powder and season salt, and drizzled some of the remaining sauce over the chicken and potatoes. YUM!
