Hi,
I have a chicken soup recipe that I do in the crockpot that is easy, quick (do it on high if you want it done in 4 to 5 hours)and delicious. It is very filling and served with a loaf of bread or biscuits, it can be a one pot dinner. Here's the recipe.
Ingredients:
2 teaspoons of olive oil
one carrot, thinly sliced
one small onion, finely chopped
2 inner stalks of celery, finely diced
2 skinless chicken thighs (boneless), trimmed of fat
3 - 4 cups reduced sodium chicken stock or broth
salt
pepper
one Tbsp chopped parsley
1/2 package of no yolk medium or wide noodles
Heat two teaspoons of olive oil in a skillet. Add a small chopped onion,one diced carrot,a small amount of diced celery, and saute the vegetables until softened, about 10 minutes. Place onion carrot,celery mixture in the crockpot. Add to the crock pot two boneless chicken thighs trimmed of all visible fat.
Add 3 or 4 cups of reduced sodium chicken stock. Throw in fresh parsley, salt and pepper. Turn the crockpot on low if you want it ready in 7 or 8 hours or on high if you want it ready in 4 or five hours. It is done when the chicken is nice and tender.
Boil 1/2 package of no yolk noodles according to package directions. Drain and place in a plastic bag and put in the fridge. When ready to serve the soup, take out the noodles, heat up the soup and add the noodles. Serve with grated parmesan cheese or soy parmesan cheese.
This soup is so flavorful and delicious that I have made it several times since I found the recipe in my Turn Around cookbook.
