Again, this is in European meassures, but this is so good, i just had to post it:
Ingredients: 6 Roma Tomatoes (those are quite sweet and mellowtaste, but firm) 2 big carrots 1 union 1 garlic 1 zucchini 400gram mushrooms 2 bell peppers (i use one red, one yellow) soy minced meat italian seasoning pepper salt lasagne noodles tomato sauce soy mozzerella
Dice the tomatoes and carrots. Cut the union and garlic into small pieces. Saute the union and garlic, add the tomatoes and carrots. Let simmer for a while, around 15min, until they are very soft. Then puree the mixture into a sauce.
In another pan follow the directions of the soy minced meat, and saute that till done. Dice the mushrooms, zucchini and bell peppers. Add the meat, mushrooms, zucchini and bell peppers. Add italian seasoning, salt and pepper to taste. Simmer for 5 min. If there is too little liquid, add some tomatosauce until it is a nice amount of sauce.
Preheat the oven to 170C/350F. Take an oven casserole that can have a lid on it. Grease the casserole lightly. Layer sauce and noodles, starting and finishing with sauce. Put lid on casserole, and put casserole in oven for 30 min.
After that, put slices of mozzerella on the lasagna and put the casserole back in the oven, without lid, for 15min or until fully cooked.
It is not the completely normal lasagna, without bechamel sauce, but my friends and i love it
