For the buttermilk you would use the soy/rice milk with vinegar combo, but I'm not sure how much since it's such a small amount and for the butter I guess you could use canola or olive oil or leave it out? It needs work, but better than nothing!
Best White Bread (Diabetic) Recipe for bread machine. 1 pound loaf (12 slices) 1 cup water 2 cups bread flour 3 tablespoons dry buttermilk 1/4 teaspoon baking soda 2 teaspoons sugar 1 teaspoon salt 1 tablespoon unsalted butter, softened 1 teaspoon rapid-rise yeast or 2 teaspoons active dry yeast
1 1/2 pound loaf (18 slices) 1 cup plus 2 tablespoons water 3 cups bread flour 1/4 cup dry buttermilk 1/2 teaspoon baking soda 1 tablespoon sugar 1 1/2 teaspoon salt 2 tablespoons unsalted butter, softened 2 teaspoons rapid-rise yeast or 1 tablespoon active dry yeast
Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Basic bread cycle and start machine. Makes one 1 pound loaf or 1 1/2 pounds loaf.
