I've made this a lot of times, and use 3tbsp of oil total.
Prepare the dressing, using 3tbsp oil and all the other stuff. Cut up chicken into small cubes, open can of artichokes and drain. Dump everything into the pan and cook at med-high. I'm tempted to make this with even less oil, 2tbsp is probably enough. And I like the idea of adding some of the artichoke juice for more flavour.
Cutting up the chicken makes it cook faster and soak up more flavour. It also doesn't stick to the pan as much so you don't need as much oil.
