Today, I've been feelinga little under the weather. I'm prone to strep-throat, so whenever I feel any sign of it coming on, I load up on the water and soup.
I was feeling way too lousy to actually have to chew anything, so I made...rice soup.
about 2 cups veggie broth (could use chicken if you like) 1 cup of rice (I used quick cooking, but brown rice would be lovely too) about two tablespoons of soy sauce a bay leaf a dash or two of parsley half a teaspoon of Chinese five spice one clove of minced garlic *SEE NOTE*
Bring the everything but the rice to a boil, and then add the rice. Cook until tender and eat until you feel better. If you have leftovers (you most likely will), the rice becomes nice and mushy, and I love it all that much more when I'm under the weather. I find that garlic, parsley and five spice make me feel a little better in soups.
*NOTE* Be careful, as garlic can be a major trigger for some. Use according to your tolerance.
Also, I use the garlic that comes minced in a jar, so I wasn't biting into any huge chunks of it. If you are doing it by hand, I recommend doing a very fine mince, or even slicing it, and then removing it, if you don't want to over power yourself. But hey, if you like garlic, leave it in!
