Super Quick Moroccan Chicken Couscous
(Makes 4 servings)
Sorry the measurements are a little funky... I adapted this from a metric recipe. If you're a metric person, see the link to the original recipe at the bottom. This is such an easy, delicious side dish or light meal! It made a perfect dinner for me tonight.
4 teaspoons pine nuts
2 teaspoons cumin seeds (I think I only used around 1 tsp)
1 cup vegetable stock
10 ounces couscous
1 medium red onion (I omitted because my tummy doesn't like raw onions)
1 lb shredded, cooked chicken (I cooked some up on my George Foreman!)
2 1/2 ounces dried apricots, coarsely chopped
3 ounces sultanas
1/4 cup fresh mint, finely chopped
1 cup fat free French dressing (Kraft makes a French style dressing that doesn't contain any HFCS!)
Stir pine nuts and cumin seeds in a small skillet over low heat until just fragrant.
Bring stock to a boil in large saucepan, remove from heat.
Stir in couscous, cover, stand about 5 minutes or until stock is absorbed, fluff with a fork.
Stir in onion, chicken, apricots, sultanas and mint.
Add pine nuts and cumin seeds.
Add dressing, toss gently to combine.
