Very Berry Muffins

Modified recipe from allrecipes.com, I was looking for something different than the typical muffin recipes I keep making (I love muffins!). These turned out a little on the almost too sweet side, but that may be because I didn't have brown sugar so I subbed 1/2 cup of white sugar and 1 tablespoon molasses. Next time I'll probably cut the amount of sugar. The oatmeal gives these muffins a great texture!
1 1/3 cup all-purpose flour
1 cup rolled oats
� cup brown sugar
1 tbsp baking powder
� teasp cinnamon
1 cup rice milk
2 egg whites
1 tbsp vegetable oil
2 tbsp applesauce
2 cup blueberries (any berry can be used)
1 Preheat oven to 425 degrees F (220 degrees C). Spray muffin cups with non-stick cooking spray, or use cupcake liners.
2 In a medium-size bowl, combine flour, oats, brown sugar, baking powder, and cinnamon. Stir in milk, egg, oil, and applesauce. Continue stirring until the mixture is well blended. Fold in the berries. Spoon the mixture into the muffin cups, 2/3 full.
3 Bake 25 to 30 minutes or until a toothpick inserted in the center of the muffin comes out clean.
