Well, between getting stuck 30 ft off the ground while rappelling and my roommates truck breaking down on the way to agate beach, I found time to bake vermont maple and banana creme pies. I love the banana creme pie, I baked a second one last night to have for breakfast this week. I didn't have a 9 inch pie pan but I doubled the recipie and it fits nicely into a 9x13 pan. The vermont maple was good too, but a little sweet for my tastes. My roommate loved it, he isn't even IBS. For making the graham cracker crusts, I put the mix into the pan, spread it out, put a pan of the same dimensions on top of the mix, then stack 3 or 4 cinder blocks on top of the upper pan. Leave it like this for about an hour, makes great looking pie crusts.
