Well, for the 3rd one, you're using new red potatoes, which would have thinner skins anyway. For the rest, I'd say go ahead and leave the skins on for IF. Really, it's up to you, and your body, and your tolerances, like everything else. Some people have problems with potato skins. Some people find that they're an excellent source of IF.
But yes, the SF in the potato would be adequate to account for the IF in the peels, so if you want to give them a try with the skins on, go for it!
Personally, I always peel my potatoes when making oven fries, not because I can't handle the skins (I can), but because it makes them seem more like "real" french fries to me. But that's just me!
