I just made SharonMello's recipe for peach gingerbread muffins. YUM-my!! I didn't have any ground cloves so I upped the other spices and used fresh peaches and they are fantastic. Next time I'll do more ginger and less cinnamon.
Here's the recipe:
Hi - I'm going to start posting recipes from my Mott's Applesauce: A Better Way to Bake cookbook.
PEACH GINGERBREAD MUFFINS
2 c all purpose flour 2 tsp baking powder 1 tsp ground ginger (I used a little more) 1/2 tsp salt 1/2 tsp gr cinnamon (I used a little more) 1/4 tsp gr cloves 1/2 c sugar 1/2 c chunky applesauce 1/4 c apple juice (didn't have any so I used water) 1/4 c molasses 1 egg substitute or two egg whites 2 tbsp veg oil 1 16 oz can peaches in own juice or lt syrup, drained/chopped
1. preheat oven to 400. Line 12 muffin cups in tin with paper liners or spray w/nonstick spray
2. in lg bowl, combine flour, baking powder, ginger, salt, cinnamon and cloves
3. in small bowl combine sugar, applesauce, apple juice, molasses, egg and oil
4. stir applesauce mixture into flour mixture just until moist. fold in peaches
5. spoon evenly into prepared muffin cups.
6. Bake 20 min or until tester inserted in center comes out clean.
7. Immediately remove from pan and cool on wire rack 10 min. Serve warm or cool completely.
