[image] [/image] Pic is preroasted. I grew these in my garden except for the baby eggplant I took from my friend's garden (she is in Pennsylvania right now). I roasted baby eggplant, zucchini, summer squash, carrots, shallots, fingerling and blue potatoes. I poured on a little olive oil and a little veg stock, salt, pepper and rosemary. It was an all homegrown meal! YUM. DH even ate the carrots which was amazing! He thinks the purple carrots are different somehow. The little potatoes were so cute.
