Helpful Boards, Manicotti and Pizza Party

I've been lurking since the boards launched and just wanted to give major kudos to Heather because they are proving quite helpful. I had a make-your-own pizza party for my birthday the other night. I made the crusts the night before in individual trays. Come party time, I just pulled them out of the fridge, threw a whole bunch of toppings on the counter ("real" mozzarella, rice shreds, olives, mushrooms, "real" pepperoni, "fake" pepperoni, a few bowls of sacue, garlic, onions, etc.) and let everyone decide for themselves what they wanted to eat. We served the manicotti with garlic French bread (just in case) while the pizzas were baking. By the way, the manicotti was so delicious and a hit with almost everyone, so I just wanted to thank the person that posted that recipe. I've been following Heather's guidelines for years and this was the first birthday dinner that didn't give me any anxiety at all. I didn't even have to answer any "why don't you eat meat, dairy, etc." questions from the people who didn't already know. My Mom made Heather's cheesecake for dessert. Unfortunately, there wasn't any left for the next day. I guess the thirty candle holes didn't stop anyone from indulging. So, I guess this is another "birthday dinner" suggestion. Reciprocally, I will be posting my favorite "safe" recipes soon.
