Hello everyone,
I just cooked this meatloaf for my husband and he absolutely loved it and it didn't trigger an attack. I've always loved Cooking Light's Meat Loaf recipe but thought we couldn't cook it anymore since following the IBS diet. Well, now that I'm more confident, I figured we could with some modifications. I hope you like it and please let me know if something is actually not IBS safe after all.
Ingredients: 1/2 cup cooking white wine or sherry (you could also do ketchup) 1/2 cup quick-cooking oats 1/4 cup minced fresh onion 2 tablespoons chopped fresh parsley or 2 teaspoons of dry 1 tablespoon brown sugar 1/4 teaspoon salt 1/4 teaspoon pepper 2 large egg whites, lightly beaten 1-1/2 pound ground breast of turkey Cooking spray
Instructions: Estimated total time: 1 hr, 25 minutes
Preheat oven to 350 degrees. Comobine 1/2 cup white wine (or sherry or ketchup), oats, and next 6 ingredients (oats through egg whites) in a large bowl. Add turkey; stir until blended. Shape meat mixture into an 8x4-inch loaf on a broiler pan coated with cooking spray. Bake at 350 degrees for 1 hour and 10 minutes. Let stand 10 minutes before slicing.
Again, we really liked this one and I guess instead of making it into a loaf you could make them into turkey burgers but we like the loaf style. Let me know what you think. This is great with steamed or microwaved potatoes.
