This is a funny and flexible recipe. For one thing, I've always cooked the chicken frozen (I never remember to thaw it ahead of time), so if you're better-prepared than I, keep a close watch on the cooking time. For another, I've used a tablespoon of lemon juice and one of water in place of the soda (I wouldn't want anyone to be tempted to drink the rest of a can of 7-Up and trigger their IBS!). Finally, if you don't cover the skillet, the sauce will reduce to a glaze, and this is how I've always made the chicken, but my parents' skillet does have a lid, so I know that if you do cover the skillet, you'll wind up with more of a traditional sauce, and it won't be quite as spicy, either. Anyway, do try the recipe!
Garlic Brown Sugar Chicken
3 boneless, skinless chicken breast halves 1/2 cup packed brown sugar 1/3 cup vinegar 2 tablespoons lemon-lime soda 1 to 1 1/2 tablespoons minced garlic 1 tablespoon soy sauce 1/4 teaspoon cayenne pepper
Place chicken in a large Ziploc bag or plastic container. Combine remaining ingredients, pour into bag or container and seal. Refrigerate 2 to 4 hours. Transfer chicken and marinade to a large skillet and bring to a boil. Reduce heat and simmer 45 minutes or until juices run clear.
