if you are sensitive to acids in tomatoes probably stay away from this recipe. I am fine with it, although I use homemade sauce made from gold tomatoes.
Tamara's summer spaghetti 4 links turkey italian sausage (there are 5 in a package but 4 is plenty) remove skin and crush up in pan garlic purple onion, vertically sliced 1 package cremini mushrooms, chopped salt and pepper and italian seasoning
heat above in large pan maybe 5 minutes and then add 1 zucchini, sliced
continue cooking until sausage is browned and the liquid comes out of veg, then drain the liquid and return ingredients to pan. Add 1 jar pasta sauce. If you want it thick do this: strain the meat and stuff in a colander and leave it for a few minutes while you put the sauce in the pan and let it bubble until thickened a little. 1 can of paste also does it nicely.
then add 1 can artichoke hearts few slices roasted red pepper, chopped basil if desired and available
Toss with 1 pound linguini and reheat everything well and cook for a little while to blend the flavors and coat the pasta. It gives it that second day taste! 1 link sausage contains 10 grams of fat so this meal should be 5 grams per person. serves 8. Let the normals put parmesan on theirs too.
