Irritable Bowel Syndrome Message Boards | Cardamom-date snack cake

I couldn't wait to post this even though I have to type it myself as it is brand new and not on the Cooking Light website yet.
Combine in large bowl
2c. flour
1t. powder
1t soda
1/2t salt
1/2t. cinnamon
1/2t. cardamom

combine in medium bowl and mix with mixers
4 1/2T margarine
1c. brown sugar
1c. apple sauce
1t. vanilla
3/4 c. egg beaters I think that= 3 eggs

Mix wet ingredients into dry until combined and add
3/4c. chopped dates or other dried fruit (I used golden raisins)

Pour into pan coated with cooking spray. Use 9inch square cake pan or I used a springform pan.

Mix for topping:
1/3c sliced almonds or finely chopped walnuts or pecans
3T. flour
3T. brown sugar
2T. melted margarine
pour over cake batter

Bake in preheated oven for 35 min- 40 min. or until pick comes out clean.

I don't have a fat total for this but was trying to figure it out.
As it was printed with total 7T BUTTER and 3 eggs and almonds it has 7.6grams of fat for 1/16 of the cake and that is 30% fat. But with no fat eggs and lite margarine I think it will be a lot less fat.
You could also substitute oats for nuts but you miss the omega 3 acids.
I just wanted to say this was delicious! I was thinking you could put less margarine in the cake and a little more applesauce, but I wouldn't change it too much.
