I was poking around on the Kraft site and found this idea (and of course adapted it to be IBS-safe). Tasty! (Edited to add that I haven't tried this yet specifically, but I used to eat something similar - pears & cheese on toast - years ago, and it's really good!)
1 fat-free tortilla
1 canned-in-juice pear half, drained well
1/2 tsp sugar (if you need it; I think canned pears are pretty sweet on their own)
1/8 tsp cinnamon
1 slice soy American or Cheddar cheese, or a bit of shredded soy cheese
2 links Boca meatless breakfast sausage, cooked and chopped up - optional
Place tortilla on a microwaveable plate. Slice the pear into thin slices, and place on half of tortilla. Sprinkle with cinnamon and sugar, top with the cheese and the "sausage", if using. Fold tortilla over filling, microwave 45 seconds to 1 minute, until hot and cheese is melted.
The original recipe called for a 10" tortilla, but I've only ever found fat-free tortillas in about a 7" size. Make one really stuffed one, or get the extra soluble by making 2 thinner ones.
