Another from the latest issue of everyday food. They suggest serving it with vanilla "ice cream" of choice.
2 peaches 2 nectarines 2 plums 2 sprigs fresh rosemary 2-3 tablespoons sugar (depends on sweetness of fruit) 1 tablespoon soy margarine, cut into pieces 1 tablespoon fresh lime juice
Preheat oven to 400.
With a fork, prick the skins of the fruit. Halve each fruit, remove the pits, and halve again. In a large roasting pan, toss the fruit with the remaining ingredients. Bake, stirring well occasionally, until fruit is tender, 15-20 minutes. Serves 4.
I know fruit skins aren't safe for a lot of people, but I would leave them on, and just carefully pull the skins off my serving once it's cooked. Peeling peaches is a pain in the butt, and from the looks of the picture, the skin kind of holds the fruit together once it's cooked.
