I have had a similar experience with GI doctors. The second GI I went to was so nice and wonderful, he also told me I could eat whatever I wanted. I let that slide since he was so on the mark on everything else and since I had been doing so well on Heather's diet, I knew the truth. I decided over Memorial Day weekend to dip my toes into the land of fat . I made sure I coated my tummy well & over the weekend had a couple of chicken tenders & some homemade chocolate chip cookies and everything was fine. At this point I got to thinking maybe I really didn't have IBS & decided to have 1/2 of an Italian Sausage. I removed the casing & patted it with a paper towel to remove the grease & boy was I snapped back to reality. I did find out that Equalactin is some good stuff. So, this is what I found out for me. I can do some fat stuff if I am very careful & not greedy. I don't think I will ever try red meat or regular pizza again, but if I am careful & do the soluble fiber base first and take my Acacia & Peppermint Caps this works for me. I take the Acacia & Peppermint Caps before lunch & dinner. My husband asked me the other day if I had to take that every day. Well, yes I do, if I want to have a somewhat normal tummy health. He is pretty good most of the time, everyonce in a while I'd like to smack him, but not too often . If I was in his shoes, I guess it would be odd too. He has embraced my diet pretty much, which has been pretty helpful.
