I waitress at an entirely organic resturant and you should see how we cook our fish.. The scrod is baked with ritz cracker crumbs and at least 1/3 of a cup of butter on slabbed on top before baking. Same goes for our salmon.. I'd either make sure I checked out just how much butter they use.. or go with the shrimp as well.
