Retrograde's suggestion re: planning a late night meal is awesome--indeed, my last meal tends to be late compared to most. I suppose that's more European in style! The last thing you want to do is snack because you're so very satisfied!

You're "soy milk" strategy is another good one--a lot of people crave calcium/magnesium at night. Also, there's that element of "comfort." The liquid is both filling, nourishing, and cleansing. I have this nasty habit of craving COFFEE at night--I think I'd better check out some decaf options for the evening. (IT's that big gulp/slurpee/mucho grande super-size me beverage syndrome). In the winter I crave chai at night. Also, another favourite "snacky" thing is either hard candy--lasts a long time in your mouth/takes awhile to dissolve and popsicles.
I'm bad, but I love to suck on ice chips.

One thing that I like is having assorted cold leftover veg. to enjoy as a "salad"--or I quick steam up some beans for a snack (I eat them as one would "french fries.") If it's summer, though...homemade fruit puree/smoothie/compote tends to hit the spot better.
