More Number Crunching: Fat, Carbs, Protein

Dear all,
I wanted to follow up on the recent thread about figuring fat percentages and ask what other people found to be generally "safe" distributions for carbs and protein in addition to fat. It seems like most people here stay in the 10-15% fat range, and Heather says 25% MAX, so I am curious as to how the carbs (and protein, too) step in to fill the gap--especially since Heather mentions how Asian countries often have 65-75% carb intakes.
Personally speaking, I dropped my fat intake down to around 19-20% in order to stabilize, which seems to have helped a lot, and I am working on dropping it some more (to around 13% maybe). For me, though, this puts the burden on carbs more than protein since I am a vegan and I do not do well with soy. I keep my protein at around 15% nevertheless, but when my carbs start nudging up or just over 70%--mostly from grains, about 10 servings a day, with 5 veggies and 4 fruits--I start to wonder if I am pushing it.
I would love to hear what others have encountered in crunching these numbers...and then eating them! Thank you all for continued help.
