I never know when things are starting to become unsafe. Because I'm ultra-paranoid, my gut is really touchy, and I've had food poisoning from poultry WAY too many times, I only keep turkey/chicken for 3 days. Period. If it's the pre-packaged stuff loaded with preservatives (as opposed to good deli meats), I'll sometimes squeak it to 4 days, but never more than that. But like I said, I'm paranoid.
