For a lot of people, dairy IS a big trigger. You totally did the right thing by taking her off of it. Besides, dairy alone isn't going to help her gain weight any better than any other sweet things will. If she can tolerate sugar just fine, I would definitely suggest some of the IBS-safe cakes and other treats in the recipe section. Seriously. They really are good!
I know this is going to sound crazy, but if you can, try not to focus solely on her gaining weight. Focus on her health first, get her attacks minimized and stabilized, and her weight will stabilize too. Honest. I'm in the same boat, by the way - I'm too thin now, because of this crazy disorder - but as my attacks have gotten fewer and my insides feel more stable, my eating has gotten more stable, too, progressively, and I've put a few pounds back on. It'll happen for her too.
I know it's difficult to watch someone you love be so sick, and it has to be a hundred times more so when it's your child, but you're keeping a good eye on her... she will be ok in the long run. Good luck!
