Hey there!
Once you've started to stabilise, then YES, you will be able to eat more! Fyi, cooked carrots are good. Cook eggplant without much oil (grill?) and it should be okay, but eat it in small quantities at first. And when you've started to stabilise, then just peel your apples and you'll tolerate them loads better!
There is hope, really! I've been on the diet for about 6 months and I'm now off meds and doing okay. I get a bit bloated if I have too much veggies, but it's acceptable.
Keep your spirits up! It gets ALOT better, I promise. Why not try making some yummy safe goodies, like Anti-Depressant Brownies? As you're still getting worse, I'd do the "What to eat when you can't eat anything" for a short while. And make sure you've stopped having the real baddies - dairy, caffeine, coffee, high fat.
