Here is where it gets tricky because if you want to pursue the celiac diagnosis for most of the tests to come out accurately you have to be consuming gluten at the time. So Jen's advice to wait is a good one, but get in soon! You don't want to get too underweight.

For breakfast I love the Van's Wheat Free Brand waffles. A good substitute for toast. Order on-line if you have too.

As far as sandwiches go, I live in Maine and our grocery stores are not on the cutting edge if you know what I mean, but they do carry Spelt bread and other gluten free breads. I have not tried them yet but they LOOK like real breads.

And dinner I would look for the rice noodles that JenX has mentioned, they are OK or just go with the rice.

I hope this helps. But lets get diagnosed accurately first! Wish they had a travelling Doctor on this board that could come to each of us and get us the tests we need! Boy would that save some time and research!
