I'm in the same boat as you, Steph. I loooove veggies, but other than my safe carrots, potatoes, and squash I hardly touch anything else because it almost always seems to bother me. Then a couple of weeks ago I had an attack after eating a casserole made with mushroom soup (not "cream"), and all I could think of that bothered me was the mushrooms, even pureed! Since then I've been afraid to continue my quest for more insoluble veggies. But Bev is right, soups are a great way to go, and I plan to start trying that more soon. We can do this together!
