Steph, I can tolerate whole wheat bread without any problems, so I have it a lot. I had 2 slices for breakfast toast, and made a sandwich at lunch with 2 more. Why not try moving into it slowly, as you suggested, try one slice of wheat and one white (but eat the white first) and see how you do.
As for fruit -- don't you like smoothies? They're absolutely delicious! You can get your fruit in smoothies with no problem at all.
And veggies: I make a lot of soup and throw veggies in it. I start with a good home-made stock, then I can throw anything in it -- and it's always delicious. (That canned stuff is another story altogether!)
Also, I found I can even have broccoli in a casserole with noodles. I made my crock pot bourbon chicken last night, and just before serving, I added broccoli to it. I ate the noodles first, then I had the broccoli -- and NO PROBLEMS!
Raw carrots? Raw ANYTHING? I couldn't do it.
