Yes, I realise that vegetables contain variable amounts of carbohydrates. I went ahead with a vegetable only meal and it left me bloated. I think too much fibre was the culprit. The advice given, by the NHS for IBS patients following a low fibre diet, is to consume no more than 2 portions of low fibre vegetables per meal. The meal I had was composed of well-cooked and peeled: parsnip, carrot, sweet potato, roasted red pepper, courgette, and tomato sauce. Do you think it was the amount of vegetables or perhaps the parsnip and sweet potato that were too high in fibre?
