Regarding nuts, fresh veggies you may find the information on this web page of interest.

"Peel, skin, chop and cook fruits and vegetables; mash or puree beans, corn, peas, and berries. Finely chop nuts, raisins and other dried fruits, and fresh herbs. Nuts in particular can be quite tolerable for IBS when finely ground." However, some of us cannot eat nuts and some veggies like corn and beans even when finely ground due to the high insoluble fiber content.

Almond milk is a staple for many people on the board and it is quite safe.

Although many people cannot handle whole grains some individuals with IBS can tolerate brown rice, corn meal, buckwheat, quinoa and barley. Try small amounts for example try adding a small amount of brown rice to white rice after you become stable to see if it is okay for you.

Before eliminating gluten it might be wise to have a test for Celiac disease if you have not already had one. If this test is negative it is likely that gluten may not be a problem. However, wheat can be a problem for some because it contains fructans.
