I believe it is the solid left from the chocolate liquid most of which is butter fat. Cocoa powder is high in fiber - about 20-30% by weight - most of which is insoluble fiber.

However, I use 3/4 cup of it with 4 cups of sugar so a tablespoon contains about 1/3 of gram of fiber. It could be that is too much for you.

Not sure what the heat does but it seems to make it creamer
