The role of gluten sensitivity (as opposed to gluten intolerance from Celiac Disease) and IBS is questionable at best. Dr. Stephen Wangen from IBS Treatment Center that sells laboratory tests for diagnosing food intolerances for IBS has a vested interest in gluten sensitivity and testing for it. It is best to talk to a doctor to get an unbiased diagnosis and opinion on the role of gluten intolerance and IBS - IMHO.

In this case it is best to reduce wheat consumption to about 2 thin slices of bread a day in order to reduce fructan (long chains of fructose molecules strung together) intake but it is not necessary to remove it from the diet. And it is not necessary to remove gluten containing foods.
