It may be that what's happening is that your mom is emptying her gut during her D attacks so she's not really C for 2-3 days - she's just empty.
As for food, Heather's approach uses a "base" of soluble fiber foods to cushion insoluble fiber foods. It sounds like your mom has worked some of this out for herself: egg whites, toast (assuming it's unbuttered), bananas, noodles (if they don't contain egg yolks), potato, French bread are soluble fiber foods. However, dairy (like cheese) is often a trigger food for IBS and apples are insoluble fiber which can be tough unless eaten with a soluble fiber base. As for Jell-O, it may be safe but not if it contains artificial sweetener. Finally, not eating enough can be hard on IBS - the gut is often happier if it doesn't get completely empty.
Your mom might also benefit from a soluble fiber supplement. Not Metamucil which also contains insoluble fiber but a pure soluble fiber one.
