on the boards I will list the most tolerated veggies: all root veggies (potatoes, sweets, carrots, beets, rutabagas, parsnips, etc) squash with seeds and skins removed (winter and summer, cooked) artichoke hearts greens like baby bok choy or spinach cooked peas and beans cooked cooked aspargus (for most)
harder to digest: corn bell peppers onions (leeks are easier IMO) coarser greens like kale and chard tomatoes (acidy) broccoli, cauliflower, brussels, cabbage (I eat broc every week though) raw veggies Jerusalem artichokes are a root veg but full of inulin which causes gas in many (don't tell my farmers' market customers I sell them to )
For raw salad greens, mixed baby greens or light leafy lettuces or even baby spinach are way easier than romaine or especially iceberg. IBSers shouldn't do iceberg.
Hope this helps. I eat any vegetable I want but for some that requires caution. It is better to eat veggies requiring caution than to cheat on bad for you foods!
