I don't believe anyone suggests that IBS is food related. I believe the only claim that can made is that dietary adjustments may help manage IBS symptoms. However, there is no doubt that IBS is affected by one's emotional state.
While white bread does contain some soluble fiber it probably isn't the best source. You might consider experimenting with a soluble fiber supplement to get you daily intake of soluble fiber up to 20-30 grams a day. You would have to eat a couple of loaves of white bread a day to get that much soluble fiber since there is only about 0.2 grams of soluble fiber in a slice of bread. Are you currently getting 20-30 grams of soluble fiber each day in your diet?
Have you talked to a GI doc about using low dose antidepressants, anti-anxiety medication, antispasmodics or laxatives to manage C?
