Well I think 1 or 2 is probably optimal for most people, you could even feel quite happy skipping a day every so often if you knew there'd be no problem going the next day. The most important thing (I keep reading is how you feel - ie comfortable, relieved, satisfied, whatever you want to call it when you do go).
Personally, I'm far from stable yet and could go anything from once a week to 7 or 8 times a day. I'm amazed by a friend of mine who swears she goes once a day at the same time every day - as does everyone in her family, including the babies!!! They can all plan for it and it's over, done with, no worries! Isn't that fantastic. It's certainly beyond my wildest dreams!
There may be something in that family link, though - there's not much pattern with anyone in my family, although none of them suffer quite like I do!
btw, perfectly valid question. I'm personally over the moon to have found some people I can openly discuss poops with, without worrying about whether I'm boring or offending those who have nothing in that department to worry about! 
As long as there are IBS boards, there will ALWAYS be talk about poops...
